Clever set--one pan grills to brown crispness, the other is non stick. The handles are arched in such a way to keep your hand up away from the flame or element and at an ergonomic angle. The pans have an unusual wide edge--this is to prevent slopping over. A lot of German stoves have a solid caloric element (not a spiral but a solid plate that heats up.) This plate gets really nasty when things spill, so even though we don't have those types of electric elements, a pan that keeps the food inside is very nice. And the comfy handles really are so much nicer than the straight type of handle with no heat protection. You can jump the food around in this pan for a true saute very comfortably.
I'm not sure that the advertised "food cooks ABOVE the oil" is really entirely accurate. The slightly gridded bottom does give you "grill marks" on your meats, which really doesn't happen in a non-stick pan. And oddly enough, the set of non-stick plus grill pan is perfect for "Schnitzel a la Holstein" or "Hacksteak"(Hamburger) a la Holstein. You grill your pork cutlet or hamburger in the grill pan and simultaneously, fry the eggs in the non-stick pan. Put the egg on top of the meat and crack open some kind of frothy blond German beer. Add a side of French fries and salad and you'll have a very typical German meal. (I prefer Berlin-style bratkartofflen which are seasoned home fries.)
Naturally, your doctor will disapprove of this typical German dish meat-with-egg-it's-not-like-it-doesn't-already-have-plenty-of-cholesterol-what's-up-with-that. But one way farmer wives filled the hearty appetites of hardworking men was to top the expensive meat with inexpensive eggs that you pick up from the hen house. Believe me, they know all the tricks to fill guys up--another is to have a starter of a sweet pudding made of cream of wheat and put stewed sugared fruit on top. This is the "appetizer"--or it could be rice cooked in milk with sugar and some egg stirred in. After that first course, a four-ounce hamburger will not seem skimpy to massive eaters. I had one of those hollow legs at home and the Holstein was a fine technique for avoiding the red glare stare of "isn't there ANY more?"
Anyway, a very nice set of pans and of course not cheap. But made well and quite functional.
