Seriously, I am still using my plastic and wooden tools, BUT the literature that comes with this stuff says you can use METAL tools. It is stone impregnated nonstick cooking surface. Things really do not stick to it PERIOD. NO NOT EVEN CHEESE, I tried it and burning cheese does not stick after it dries. Hey, I had to do it. The only thing I do worry about is the bottom of this pan is the same stuff as the inside - NOT bare stainless steel or aluminum. I do not know if it will hold u long term with direct exposure to flames on my gas range.
If you look closely the pan looks like it has little ridges in the cooking surface, it does. This makes for very even frying of anything that goes in here. There is also a heat indicator in the handle at the end near the pan. It turns red to let you know that the pan is hot if you are to stupid to feel heat and need a visual reminder. (okay - I have no other reason to believe that it is here except for really dumb people.)
This is without a doubt the BEST pan I have ever used for frying bacon, that alone made it worth it. other things fry just as well. If you ever had problems with bacon, cut it in half - put it in here, low heat and leave it. Turn it half way thru cooking and then drain on paper. OMG GOOD.
Follow up on 3-13-17: So far I have also fried steaks, pork chops, sausages, and even grilled cheese sandwiches in this pan. Everything comes out GREAT and nothing sticks at all. I love the grill marks on the food when it is flipped, serious looking and makes food tastier (or is that an illusion?). The bottom has held out well and this is a good complement to my other mineral pans. Bye Bye Teflon.
