I cook eggs just about every morning for my breakfast. I use medium heat (medium or lower is recommended by the manufacturer for this pan). The pan has not warped. It takes a while to heat this pan up, but then I can turn off the burner after cooking my eggs and heat up (with a sear) my sausage. Pretty cool.
I have only hand-washed it and used plastic spatulas, but the surface has one 1/4" nick in it. I do not believe the nick was there when I first received the pan, but I can't understand how it got nicked since I handle this pan (my pride and joy) separately from all of the other dishes. The small nick doesn't affect my cooking at all.
I have not used (and do not plan to) this pan in the oven. I see that there is a plastic ring you can remove so that you can take off the metal handle and use this pan in the oven. I have not tried it, so I cannot comment on the difficulty of taking the handle off and putting it back on again.
I have been using this pan for several weeks now and ordered a second one for when I miss a day of washing my dishes.
I have ordered some 10.5" glass lids from other manufacturers here on Amazon and will update this review when I see how they fit this pan.
It is expensive.
It is flat.
It works fine on induction (but requires a greater power input than cast iron).
The higher sides make pancakes a little harder to flip but makes the griddle more versatile overall. My wife can fry in it and we like chimichangas.
My wife, who grips about grimy cast iron (I wouldn't let her scour it), likes that it cleans up so easy.
Overall, a good substitute for cast iron (if you can overcome the price difference).
