Conventional cookware and other ceramic cookware brands achieve their non-stick performance through a coating of PTFE (PolyTetraFluoroEthylene), a synthetic substance that has waxy properties. At very high temperatures, PTFE begins to decompose and release fumes which are documented to be lethal to birds and small pets, and can be harmful to humans. were showing the damaged pan or food that stuck to the pan. I've not taken any special care with mine other than using common sense (no metal utensils, wash and dry soon after using, don't burn food in it, store with something protecting the face of the pan, etc). I'm pleasantly surprised that it has held up as long as it has. Take care of it and it will serve you well.
Fast forward to a year later or so, and this pan has gone from non-stick to super-stick. There's a permanent film in each of the little holes at the bottom of the pan that I can't scrub off no matter what I can do. I even tried letting it sit in vinegar all night.

Long story short, this is a great frying pan for a few months.
We were militant about taking care of these pans. We hand washed them with a dishcloth. We never let metal touch the inside surface. We made sure when they were drying there was no way any of our other dishes could possibly touch the inside surface. Imagine how disappointed and dumbfounded I was when they stopped working properly. I still have no idea what happened but they didn't last. We bought the 10" and 12" models and both are starting to chip ever so slightly as well.
I'm wondering if they simply don't stand up to the heat over time or if the batch our pans came from was faulty.
Don't buy these pans. If I had written this review within the first month I'd have given these 5 stars. I imagine that is what most people have done and ultimately why these are so highly rated.
