I've been looking for a nice sharp knife to replace another brand of knife that I have that I can't find anymore. This knife is very sharp! I have cut myself with it about 3 times ( not really the knife's fault). I like the knife for its sharpness factor, but it seems a little "wambly" or "unsteady" when slicing through something firm, like a potato. I don't regret buying this knife, I do use it, but I wouldn't order another one. I would prefer a stiffer blade and the handle is small so if you have damp hands, it can be slippery, it needs a better gripping handle.

I always loved Victorinox since I received a tomato knife as a gift from a family member. I wanted these knives because of the round tip as I feel it’s a bit safer on the dinner table with our grabby 3 year old. Very sharp. I would have liked a slightly larger handle with my large hands but they’re just right for smaller people like my mom. These knives are truly a value for how well they perform.

A steak knife doesn't need to be long, or heavy, or have a pointed tip at the end of the blade. The only reason you own the knife is for the edge itself; the rest is only to hold the edge and can be minimal as long as it's sturdy enough/
Serrated edges reduce cutting effort, and seem to sail through even tough meat with ease. Most of the wear is concentrated at the points of the "teeth", so it is here you will focus on in re-sharpening. You'll recognise the need to sharpen when those teeth develop tiny "hooks" that you can feel with your fingernail on the flat side. You can easily feel them when drying the knife after washing (hand washing, of course: never place a good knife in a dishwasher). Don't be dismayed, as ALL knife edges need periodic resharpening.
Using a fine stone, hold the knife's flat side toward the stone with the spine (opposite the edge) raised a few degrees and only the edge touching the stone. Gently stroke the flat edge along its entire length with the stone, then check to see whether you've affected those "hooks": if not, stroke again. Repeat until the "hooks" have disappeared. Even using a gentle touch and a fine stone, this ought not take more than several strokes. DO NOT stroke the other side of the blade, where the serrations have been hollowed out at the factory, on the stone at all, as it won't aid the resharpening effort. Those inner edges are still sharp, and need no effort.
Once you've removed the tiny "hooks" on the flat edge, you're done. Clean the knife of any particles, and store it so it doesn't touch any hard surface.
A thin blade such as this knife has shouldn't be used to try to cut through bone: if you hit bone or very tough gristle, move away from it and try cutting there.
Given minimal care such as the above, this knife ought to give long service with an edge close to the original.
I actually love Victorinox knives. I kept back one star because I didn't get the one I ordered. Amazon is great about returns and in my opinion doesn't make many mistakes considering the volume of items they ship. I'm disabled tho and returning things is a bit of a problem. The knife I got will still be a great utility knife for my daughter.
I just got a similar one last week and have used it daily. I can't believe how sharp it is. (I believe it more today since I cut my finger with it last night.) It does a wonderful job on meat and veggies. I've been telling everyone how wonderful it is. I think you get used to your old knives....I even thought I kept them sharpened....and don't realize what you are working with. If you are even considering a new knife, make it one of these. I bet you won't regret it.
The product description says this knife is 4.3 x 2 x .5 what I received is much larger. The item is for a gift and needs to fit easily in a container that is at best 7.5 long. This doesn’t even come close to fitting. For a specialty item I was willing to pay a bit more especially to get a rounded tip. Sadly this item doesn’t meet the criteria making it of zero value.
