The reason you want to buy this pan instead of the 8x2 round pan is that your cakes will rise more evenly because the high sides shield the batter from the initial wave of heat. This means you can shave off less cake when you're stacking layers and get a more professional looking finish. Highly recommend.
My original 5-star review follows.
These are what I consider to be the perfect pans to make a layer cake. Two of these 8" diameter pans fit next to each other on my oven shelf. They have straight sides. Together with Wilton 415-0795 2-Piece Bake Even Strip Set, they give me fairly flat layers that I don't have to trim.
Price is right, too. At the time I'm writing this review, the price of two "Add-On" pans is less than the set of two. Go figure...... But know this: Just because the price is so reasonable, do not assume they are not quality pans. They are good quality? They have not warped. They hold their shape. They clean easily. They are light-weight.
The strips that I mention above, (which are first soaked in water then wrapped around the pans like belts), keep the sides of these aluminum pans at a little cooler temperature while baking. That means the temperature around the sides somewhat approximates the temp in the middle of the layers--then it all rises together without a dome. Really works!
Even if I get a slight dome on a layer, a serving plate with a bit of an indent takes care of it.
Amazingly, I've been making a layer cake a week, since these pans make it so full-proof, and (I'm not ashamed to say) boxed cake mixes make it so easy. I change up the boxed mixes with different juices, and/or extracts, nuts, fruit, citrus, colored dyes--all simple stuff. I do the same with the filling and the icing, and I'm having a lot of fun.
